Graham Flour

Graham flour is a type of whole wheat flour named after Sylvester Graham.
It is slightly coarser grind than whole wheat flour.

Graham despised the discarding of nutrients and bleaching with alum and chlorine involved in making white flour and white bread, and believed that using all of the grain (without adding chemicals) in the milling of flour and baking of bread, was a remedy for the poor health of his fellow Americans during changes in diet brought on by the Industrial Revolution.


Great:
1. Perfect to mix with flour in making bread, pao and mantou.
2. Graham flour gives very nice texture and natural aroma. You will know what i mean when you take out the freshly baked bread from oven and the entire house is full with that wonderful aroma!

Organic Homemade Roselle Jam

The Rosselle is known as the Rossella or Rosella fruit in Australia. Our corn farmer, Hee has recently harvested his Rosselle in his corn farm and made jam for us. Jam is red and abit sour.


Jam Recipe:
1. Cook Rosselle buds with 30% water.
2. Constantly stir it until they become soften.
3. Excess water can be used to make beverage.
4. The soften fibers used as jam.
Tips: Only add sugar after turn off the heat as sugar can become toxic while boiling.

Roselle is used in traditional medicine as treatment for hypertension and urinary tract infection but to date still lack of sufficient evidence to measure it efficacy. The anthocyanins are antioxidant nutrients found in red fruits. They help to prevent aging and degenerative diseases.

Breakfast @ Mugshot Cafe in Chulia Street, Penang

On Merdeka day's morning, i was thinking to have something different for breakfast. Something not oily and not too filling. Like a bagel? I was kinda excited as never had bagel here but recently a friend of mine mentioned this Mugshot Cafe is famous for their bagels. The cafe is next to the Rainforest Bakery.


This cafe has a simple menu, all you can see on this wall are what available to order. Three categories of foods: yogurt, drinks and bagels.


Order and pay at the counter. Waiter will serve the food when ready.


Bagel with cream cheese. RM5. Freshly toasted before served, soft and very crunchy. Delicious!!
I heard their bakery is preservative free.


Cappuccino. RM10.


Homemade yogurt with mango and walnut. RM10.  The white color yogurt is a bit sour and cheesy (not sure why..). Don't expect it similar to the yogurt from supermarket as it is not sweet at all. Only the mango cubes were sweet, to me it was perfect combination with walnut and yogurt.

I enjoyed the bagel most. It is not chewy and hard like what i had before.

Vege Box From Terra Farm

I got my first vege box from Terra Farm!
So far i tasted the Choy Sum which is quite skinny compared to those from market. Both the leafs and stems were abit soft.  I thought maybe it was due to the vege not stored in fridge before i picked them up. But after I stir fried the Choy Sum with garlic, the color of the Choy Sum was even more fresh green. I never saw such green color on Choy Sum before. It was very crunchy and sweet too until i forgot to take photo! haha.. I love it!! I think i will love the rest too!

Tips: Pumpkin skin is edible and nutritious. Organic pumpkin has softer skin somehow. I just steamed it and smashed it. Getting them ready for pumpkin bread. Yay!

Despite the price increase of the vege box few months ago, i still think it is worth for the quality. Every time i pick up the vege box, i am feeling excited what is inside. Recently someone told me that eat what i dislike (refer to vege) will make me healthy. I think of my vege box and i know i am committing to it....

Talk:不簡單的簡單 By the Owners of Terra Farm, Cameron Highland

I attended an organic sharing session in PISA, 不簡單的簡單. The talk was given by the owner of Terrra Farm, Mr Ng and his wife.


Key take away:
1. They grow vegetables with original seeds. Not hybrid because they believe original species has the most nutrients.
2. Use grass, goat and cow dungs in their farm for composting. They don’t use chicken dungs, don’t use organic fertilizer.
3. Their land initially was all red soil, not fertilized. Now, the soil is black color because very fertilize.
4. Healthy plants has the leaf facing upwards to absorb the sunlight and has just enough nutrients from healthy soil. Unlike the commercial vegetables which are fed with chemical fertilizer(very concentrated), causing more water absorption. Hence, the leave are overweight and facing downwards.
5. Disagree with organic hydroponic because is not naturally grown in soil and less nutrition.
6. The farm is certified Demeter by Bio-Dynamic Research Institute in Australia.

Both of them are very preserve with the quality of their vegetables. I asked a question why their carrots has weird shape during the talk and they answered. After the talk, i found out they also posted the answer in their Facebook for sharing. They do care for our concerns!
And those are the compelling reason i ordered my first vegetable box and to be picked up next Monday. :)

Farm Visit: Corn Farm in Kedah

I always wanted to visit Hee's corn farm because once a while, he will deliver his chemical-free corns to our office for sale. The corns are delicious!


His farm is situated in Kampung Relau, a small town in Bandar Baharu, Kedah. One fine Sunday, we waited at the exit of Jawi toll and Hee led us to his farm which was about 20 minutes drive.


It is a three acres farm. When we stepped into the farm, we didn't see a lot of corn plants because he divided the farm into small plots and grow the corns on certain plots only.


Hee pointed to us the direction where the wild boars came and ate some of his corns. He said animal has the wisdom to eat the not so well grown crops and left the better quality crops for the human. Small part of the corn plants were actually flooded with water after rain.


He is doing one-man show in this farm. These are the fruits of his labor. We had the privilege to eat raw as Hee gave us a corn which was freshly plucked from the plant. It was the sweetest corn i ever had in my life! So fresh and so juicy!


Believe or not, he did not need to water the plants at all. No irrigated water, no sprinkle, and no hose in the farm.  The corn plants are solely depending on the rain water. When the weather is hot and dry, the leaves will be twisted to protect itself from "dehydration".


The stem of the corn plant indicated the nutrients it has and how good the corns will be. This one is rather fat...


We noticed the surface of the soil was quite dry until cracked. Hee said it was alright because the soil down there was actually moist. Healthy soil has the capability to absorb water from the lower ground.


These corn plants are 1 months old. This explained why we will not get to eat corns until September. A cycle of growing corn until harvest is about 65 days.



After harvesting the corns, the plants will be removed. The plot will be emptied for couple of months to improve the soil fertility.


Hee explained soils with high organic matter content contain a greater abundance of water-stable aggregates and have a greater exchange capacity, which translates into better structure and water-holding and nutrient absorption capacities. When the soil healthy, the plant will healthy and attract less insects, also less fertilizer will be needed.



In the farm, we can see plenty of bushes next to the corn plants. This is rare in normal farming because every inch of the soil are fully utilized for planting. These bushes serve the function to attract insects so that they won't attack the corn plants. I was curious how the insects know they should go to the bushes instead of the corn plants. Hee said the bushes have been there for long time and the corn plants are recently grown, so the insects recognize the place they used to visit. How interesting!


He did not bother to remove the unwanted grass or unknown plants. He believes they are helpers to improve the soil.


This is another plot that Hee did not grow anything to treat the soil. He is using Biodynamic method in his planting.

Biodynamic agriculture is a method of organic farming that emphasizes the holistic development and interrelationships of the soil, plants and animals as a self-sustaining system.

Also, he is practicing "planting by the moon". Plants respond to the same gravitational pull of tides that affect the oceans, which alternately stimulates root and leaf growth. This methods has been practiced for hundreds of years. It is a great compliment to organic farming because the soil is not chemically treated.



This was the only vegetable found in the farm. Isn't the color of red bayam beautiful? Hee said the leaves has high iron.


What was Hee doing?

He plucked a baby corn for us to try! I tasted the silk first and it was actually sweet!!


Oh my god! This was the sweetest and tastiest baby corn i ever had. I could never imagine it can be so nice! After eating, my mouth still has the fragrant of corn. 


 The herb with small white flowers and the herb below it are naturally grown in the farm and Hee eats them everyday to give him energy. I tasted the one below, bitter!


Enzyme made of the fruits skin and chicken manure are used for composting.


Other side of the farm we saw Rosella plants and papaya tress. They are still young.

When we were about to leave, Hee told me that day was rather dry so no leeches. During rainy days, there are huge leeches from the small stream outside his farm that can suck blood for 2 hours until reach the size of hand palm and left a Y-shape wound! Honestly, i love nature but i am not so brave. Both my legs were soft after hearing what he said and luckily he only told after the visit. To Hee, he was fine with them and he said is good for health. 


After the visit, i learnt that life can be so simple and so natural. Hee never complaint the animals ate his corn or damaged his corns, or complaint about small harvest. Yet, he has so much to share from his experiences and knowledge, and keep improving for the next planting. 


Grow anything naturally is never easy. I wish to thank him for his love and care for the soils while growing us the healthy and nutrition corns.  Hee passed to us two boxes of corn kernels that his mom prepared for us before we left. I haven't met her but really appreciate her kindness. 


The following Monday  morning when i drove to work, it was raining. Naturally I thought of the corn plants as they got water that morning.

It was a short visit but it energized and inspired me so much! (is it because of the herbs? haha..)

Do You Know Commercial Bread Does Not Grow Mold?

Do you remember when was the last time you saw mold on bread? Can't remember right?


Probably you thought you have finished the bread before the expiry date to notice it. In fact, the commercial bread even after the expiry date still do not grow any mold due to the preservative added.

I didn't mean to waste food but i experimented with a bun.


Ten days after the expiry date the bun still not having any mold.

 

When i bought the bread it was having five days to expire.


Compared to the home baked bread, on the 4th days(counting from the day the bread was baked), i can start to see some mold even though kept inside container at room temperature. This photo was taken after seven days.


Other than the cheese on top, the white color cotton-like on the surface are mold.  The only way to preserve a home made bread is to store in the freezer. Steam it when want to eat.

Calcium propionate (along with propionic acid and sodium propionate) or preservative 282 is used as a preservative in bread and other baked good to extend the shelf life of loaves.It is mold inhibitor.

Bad about preservative:
1. Irritability, restlessness, inattention and sleep disturbance in some children may be caused by a preservative in healthy foods consumed daily. People generally thought bread is healthy food.
2. Calcium propionate has been studied extensively for toxicity and as a potential cancer-causing agent in the laboratory.
3. Calcium and sodium propionate have the potential to permanently damage stomach lining by exacerbating gastritis and inducing severe ulcers
4. Calcium propionate, like all forms of propionic acids, is linked to migraine headaches.
5. Calcium propionate is also used in dried fruits, dairy products and fruit juice.

My preferences:
1. Buy bread without additives or preservative from the nearest bakery shop. Example:

2. Get a bread maker, make my own bread.

Gardenia bread claims no artificial, synthetic or unnatural preservatives. Gardenia has replaced calcium propionate with natural ingredients such as raisin juice concentrate and vinegar. Is the juice concentrate and vinegar really natural?

I don't know need to eat how many commercial breads to get the bad impacts. But knowing the fact that commercial bread doesn't grow mold, i really prefer making my own bread as i don't need any additives or preservatives to bake a soft and delicious loaf.
